Spicy Okras

Okras or Ladies Finger are my utmost favourite vegetable. Some people may dislike the stickiness or gooeyness of this veggie. But if cooked well, it’s the most delicious thing in the world. (At least that’s the case for me)

This is a very simple and hassle free recipe that can be made in a jiffy. The recipe has just a few ingredients but its packed in flavour.

Ingredients:

  1. Okras (250 grams)
  2. 6 to 7 Garlic cloves
  3. Cumin Seeds, 1 tsp
  4. Turmeric Powder, 1 tsp
  5. Red Chilli Powder, 1 tsp
  6. Coriander Powder, 2 tsp
  7. Dry Mango Powder, 1 tsp
  8. Salt to taste
  9. Oil, 2 tbsp

Calorie intake: 100 gms = 52 cal
Procedure:

  1. Wash the okras and dry them with the help of a kitchen towel. The reason for doing this is simple. Excess water can cause the okras to be slimier.
  2. Make sure to use a sharp knife. Cut the top and stem part and throw that away. Now cut the okras in two parts and slit the two parts from the middle as well.
  3. Take the chopped okras in a bowl and add all the spices i.e turmeric, red chilli powder, coriander powder, dry mango powder & salt. Mix it well so that all the spices coat the okras.
  4. In a non-stick pan, add 2 tbsp sunflower or olive oil.
  5. Now add cumin seeds and garlic cloves and let the garlic turn golden brown.
  6. Add the okras mixed with spices to the pan and sauté it.
  7. Cover the pan with lid and let it cook for about 10 mins.
  8. Take the pan off the heat. Spicy Okras are ready to be served with Roti (Indian Bread) or Rice and curry.

Tip:

  • You can also add 1 tbsp chickpea flour to the okras while mixing the spices to reduce the sliminess.
  • Another method of cooking this dish is to coat the okras in chickpea flour and deep frying them. In a bowl, add the spices mentioned in the ingredients to deep fried okras. Add salt as required. Toss it well. Its ready to be served.
